Even though it’s really cold outside, I still decided to make a frozen dessert. After making this delicious banana almond bar, I did some yoga and warmed up. I grabbed a piece of the bars after yoga and felt so good 🙂
The secret to this dessert is how well banana goes with almond and almond butter. Also, it’s very light and includes healthy ingredients. Here is the simple, no bake recipe. Almond Banana Bars
- 1.5 cups raw almonds
- 1 tbsp almond butter
- 2 tbsp pure maple syrup
- 1 tsp cinnamon powder
- 2 tbsp coconut oil (melted)
- 2 medium bananas (ripe)
- 2 tbsp almond butter
- 1/4 cup coconut oil
- 3 tbsp vegan semi-sweet chocoloate chips
- 1/2 tbsp coconut oil
Add all the crust ingredients in a food processor and process until you have a batter that is slightly sticky. Scrape down the sides while processing as needed. I use Ninja Mega Kitchen System as my high speed food processor. It's versatile and very efficient.
Line a 8"x 8" pan with parchment paper.
Add the crust mixture to the pan and even out with your fingers.
Place the crust in the freezer.
Add the middle layer ingredients to the food processor and process well.
Take the crust out of the freezer and pour the middle layer mixture on to the crust. Spread evenly.
Place the pan back into the freezer for 1 hour.
After 1 hour, when the middle layer is solid, prepare the top layer. In a small sauce pan, add the ingredients and on very low heat, melt the chocolate.
Remove the bars from the freezer and take them off the pan by lifting out the parchment paper.
Cut the bars in equal pieces (mine came out 9 pieces).
Drizzle the chocolate on top of each piece.
Put the bars back in the freezer until the chocolate drizzle become solid.
Enjoy them straight from the freezer. Put the remaining back to freezer immediately since they will melt quickly.
