Once in a while, it’s nice to have a delicious, nutritious salad for dinner. I like to close the day with a meal full of nutrition that is easy to digest especially if I have a rather big lunch.
This vegan kale salad is very fulfilling and, needless to say, full of key nutrients. Its magic is the dressing which gives a very refreshing taste.
Here is the simple recipe.
Breezy Kale Salad
Ingredients for salad
- 2 cups chopped kale
- 1 sweet red pepper
- 1 sweet green pepper (you can add yellow pepper too)
- 1 pickling cucumber
- 1/3 cup chopped tomatoes
- 1 tbsp hemp seeds
- 1.5 tbsp olive oil
Ingredients for dressing
- 1/2 avocado
- 1 lemon juice
- 1 tbsp cashews
- 1 tbsp olive oil
- 1/2 tbsp water
Add the chopped kale to a salad bowl.
Add the olive oil and massage the kale between your hands to soften them.
Add the rest of the vegetables.
Add all the dressing ingredients to the high speed food processor (if using a regular blender, soak the cashews for a few hours).
Add the dressing to the salad and mix well.
Voila! You can add salt, crushed red peppers or any other seasoning to your taste.
