Kale & Chickpeas Salad

Hi All,

I have a nutritious and delicious salad recipe today, that’s very summery and very fulfilling.

Here are the ingredients:

– 2.5 cups kale

– 1/4 can chickpeas

– 2/3 cup red cabbage

– 3 green onions

– 1 avocado

– 1 cup flat parsley

– 1/3 cup fresh mint

– 1 yellow squash

– Lemon juice & olive oil

– Salt and sumac for seasoning

Directions:

– Finely chop the kale and squash, and steam.

– Finely chop the cabbage, green onions, parsley, mint and avocado. Add them to a bowl with the steamed kale and squash.

– Add the chickpeas to the mix.

– Add lemon juice, olive oil and seasoning to taste.

Voila! Simple yet delicious.
