Mediterranean White Bean Salad

Hi All,

My husband couldn’t join me for dinner tonight. When I’m by myself for dinner, I usually fix a light sandwich or a salad and eat it quickly in front of TV. It is really a bad habit by the way! I should take my time and enjoy every bite of what ever I eat at the moment.

While I was debating what to quickly fix for dinner, a very good friend of mine, Ash, texted me the above picture. Of course, it made my mouth water. He offered to share the recipe to put on the blog. How could I resist! He has cooked for us several times and everything he makes is simply delicious!

So, here is the recipe.

Ingredients:

– 1 can cannellini beans

– 1 bunch parsley

– 1 bunch green onions

– 1 bunch fresh mint

– Fresh lemon juice

– 5-6 tablespoons olive oil

– Sumac & cumin for seasoning

Directions:

– Drain and rinse the beans

– Finely chop the parsley, green onions and mint. Add them to a bowl along with the beans

– Add the olive oil and freshly squeezed lemon juice (you can adjust the amount to your taste)

– Add the seasoning to taste

– Mix thoroughly

Voila! Super simple yet very delicious. It can be a very nice side to your entree or great salad for lunch. I think it is perfect for Spring. Thanks Ash!
