Stuffed Zucchini

Hi All,

The other day, I read a social media comment criticizing the vegan diet in terms of its limitations. Unfortunately, people think vegans eat salads only. How misleading. So, I decided to make a delicious and nutritious stuffed zucchini for dinner. Oh, they came out so amazing..

Here are the ingredients:

– 4-5 zucchinis (choose larger ones since we will stuff them)

– 2 small onions

– 1 green pepper (Anaheim peppers will do)

– 1 bunch of flat parsley

– 3/4 cup basmati white rice

– Olive oil

– Salt

– Ground black pepper

– Crushed red pepper

– 1.5 table spoon tomato paste

Finely chop the onions, parsley and the green pepper. Toss them in a cup with the rice. Add salt, black and red pepper to taste.

Cut both ends of the zucchinis and peel them (you can peel every other inch to make stripes if you like). Cut the zucchinis in half, length wise. With a small spoon, scoop out most of the flesh and the seeds of each half to produce room for the stuffing.

Fill each half with the rice mixture that was prepared earlier and set them in a pot. Drizzle 4 tablespoons of olive oil over the stuffed zucchini.

On a separate cup, bring 1.5 cups of hot water and 1.5 tablespoon of tomato paste together. Stir thoroughly until the paste is melted in the water. Add the mix to the pan.

Cover the pot, bring it to the stove and with very low heat, start cooking. Keep it on the stove until the rice is cooked.

And Voila! Once you get the hang of it, it is so easy to make.
