The Holiday baking is still on, especially when it’s cold and snowy outside. For this year’s final baking adventure, I picked cookies flavored with tahini and peanut butter. The best thing about them is the way they melt in your mouth. They are very soft and tasty. Would be a perfect pair for an afternoon tea or coffee.
They are of course vegan, don’t contain refined sugar and baked with almond flour. Here is the simple recipe:

Tahini & Peanut Butter Cookies
Ingredients
- 2 cups almond flour (not almond meal)
- 1 tsp baking powder
- 1 cup peanut butter
- 1/3 cup tahini
- 1/2 cup maple syrup
- 1/3 cup olive oil
- 1 tsp vanilla extract
Instructions

Mix the almond flour and baking powder in a bowl.

In a separate bowl, combine and mix all rest of the ingredients and pour the mixture into the other bowl.

Mix thoroughly. The batter will be loose (if too loose, add little more almond flour).

Line a parchment paper on a baking pan.

Pour the mixture into the pan, 1 tablespoon at a time. Give each piece a round shape with the help of a spoon.

Bake at 350 degrees F for around 12-14 minutes. Do not over bake since they are supposed to be soft.
